Rewa

Ingredients

 4 ozs. salted butter
 4 ozs. semolina
 5 ozs. white sugar
 8 cups sugar
 3 eggs
 3 cups milk
 2 tsp. vanilla essence
 1 tsp. freshly ground cardamom
 4 ozs. almonds
 2 ozs. raisins

Method

 In a pan, melt the salted butter on a low heat.
 Stir in semolina, and fry until all the aroma emerges, and it bubbles and cooks. Stir constantly for about 5 minutes.
 Add in the sugar. Mix well, and then take the pan off the heat.
 In a separate bowl, beat the eggs. Add a little milk to this, and strain through a fine sieve, into the pan with the semolina. Keep mixing the semolina so that it does not curdle.
 Return the mixture to low heat, and add 2 cups of milk to this. Keep mixing this, until the mixture thickens, and coats the back of the spoon.
 Add the remaining 1 cup of milk (as needed) to get the right consistency of choice.
 Add vanilla essence, and the freshly ground cardamom.
 To serve, roast some slivered almonds and raisins, and sprinkle on top.

Serves 6-8 people.
